METHOD
Why It Works

A Parmesan and panko crust crisps up golden in the pan. A quick dredge keeps the coating stuck to the juicy chop inside.

Quick Fixes

Crust falling off: press it on firmly and don't move the chops too soon.

Coating browning too fast: lower the heat to cook them through.

Ingredients

Protein

4 boneless pork chops, about 1 ½ lb

Seasoning

1 teaspoon kosher salt
½ teaspoon black pepper

Breading

½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
¾ cup grated Parmesan
1 teaspoon garlic powder

Sauce

¼ cup olive oil, for frying

Topping

lemon wedges, for serving

How to Make It

1

Pat the pork chops dry and season with salt and pepper.

2

Place flour, beaten eggs, and panko mixed with Parmesan and garlic powder in three shallow dishes.

3

Coat each chop in flour, then egg, then the Parmesan panko, pressing to adhere.

4

Heat olive oil in a skillet over medium and cook the chops 4 to 5 minutes per side until golden and 145°F.

5

Drain on a wire rack.

6

Serve with lemon wedges.

Store

Store up to 3 days.

Reheat

Reheat in the oven or air fryer at 375°F to keep the crust crisp.
