Add the remaining oil to the skillet, stir in the garlic and sun-dried tomatoes, and cook 30 seconds. Add the gnocchi, broth, and cream, bring to a simmer, and cook 5 to 6 minutes, stirring, until the gnocchi are tender and the sauce thickens.

Stir in the Parmesan, then stir in the spinach until wilted.
