• 3 cloves garlic, minced
• 1 cup low-sodium chicken broth
• 1 tablespoon fresh lime juice
Vegetables
• 1 small onion, diced
• 1 cup corn kernels

How to Make It

Toss the pork with the chili powder, cumin, smoked paprika, and salt. Heat 1 tablespoon olive oil in a large skillet over medium-high heat, add the pork, and cook 5 minutes until browned and cooked through; transfer to a plate.

Add the remaining oil to the skillet, then add the bell pepper and onion and cook 4 minutes until softened; stir in the garlic and cook 30 seconds.

Add the black beans, corn, and broth and simmer 5 minutes.

Return the pork to the skillet, stir in the lime juice, and warm through.
