Add the remaining oil to the skillet, then add the bell peppers and onion and cook 4 minutes until crisp-tender; stir in the garlic and cook 30 seconds.

Whisk the ketchup, brown sugar, rice vinegar, soy sauce, and cornstarch with 2 tablespoons water, pour into the skillet, and simmer 2 minutes until thickened.

Return the pork to the skillet, stir in the pineapple, and toss to coat and warm through.
