Slow Cooker

METHOD
Why It Works

Apple cider and apples cook down into a sweet-savory braise around the pork. A long, low cook makes the roast meltingly tender.

Quick Fixes

Too sweet: balance with a splash of cider vinegar.

Roast dry: keep it nestled in the cider.

Ingredients

Protein

3 lb pork shoulder roast

Seasoning

1 tablespoon kosher salt
½ teaspoon black pepper
½ teaspoon dried thyme

Vegetables

2 apples, sliced
1 yellow onion, sliced

Sauce

1½ cups apple cider
2 tablespoons Dijon mustard

Topping

2 tablespoons chopped fresh parsley

How to Make It

1

Rub the pork with salt, pepper, and thyme.

2

Scatter the apples and onion in the slow cooker and set the pork on top.

3

Whisk the apple cider and Dijon and pour around the pork.

4

Cover and cook on low 6 to 7 hours until tender.

5

Rest the roast 10 minutes.

6

Slice, spoon the apples and juices over, and top with parsley.

Store

Store up to 4 days or freeze up to 3 months.

Reheat

Reheat in the cider juices to keep it moist.

Avo's Tip

Use firm apples so they hold their shape instead of melting into the braise.
