Slow Cooker

METHOD
Why It Works

Slow cooking breaks the pork down into tender shreds. Tossing it in barbecue sauce at the end coats every strand without making it soggy.

Quick Fixes

Too saucy: add sauce gradually after shredding.

Too dry: loosen with cooking juices before the sauce.

Ingredients

Protein

4 lb pork shoulder

Seasoning

1 tablespoon smoked paprika
1 tablespoon kosher salt
1 teaspoon garlic powder
1 teaspoon black pepper

Vegetables

1 yellow onion, sliced

Sauce

½ cup low-sodium chicken broth
1½ cups barbecue sauce

How to Make It

1

Rub the pork with smoked paprika, salt, garlic powder, and pepper.

2

Scatter the onion in the slow cooker and set the pork on top.

3

Pour the broth around the pork.

4

Cover and cook on low 8 hours until fork-tender.

5

Shred the pork and discard the excess liquid.

6

Toss the shredded pork with the barbecue sauce.

Store

Store up to 4 days or freeze up to 3 months.

Reheat

Reheat with a splash of broth or extra sauce to keep it moist.

Sauce the pork after shredding, not before — it coats better and won't turn watery.
