METHOD
Why It Works

The honey-lime glaze reduces in the same pan for big flavor with no extra dishes. Searing first gives the chicken color before the sauce goes sticky.

Quick Fixes

Glaze too thin: simmer an extra minute to thicken.

Too sweet: add another squeeze of lime.

Ingredients

Protein

1½ lb boneless skinless chicken thighs

Seasoning

1 tablespoon Cajun seasoning
½ teaspoon garlic powder
½ teaspoon kosher salt

Sauce

2 tablespoons olive oil
3 tablespoons honey
2 tablespoons fresh lime juice
1 teaspoon lime zest
2 cloves garlic, minced
1 tablespoon unsalted butter

Topping

2 tablespoons chopped fresh cilantro
lime wedges, for serving

How to Make It

1

Pat chicken dry and season with Cajun seasoning, garlic powder, and salt.

2

Whisk honey, lime juice, lime zest, and garlic in a small bowl.

3

Heat olive oil in a skillet over medium-high. Sear chicken 4 to 5 minutes per side until cooked through, then transfer to a plate.

4

Reduce heat to medium and pour in the honey-lime mixture. Simmer 2 minutes, then swirl in butter until glossy.

5

Return chicken and turn to coat in the glaze.

6

Scatter with cilantro and serve with lime wedges.

Store

Store in an airtight container up to 3 days.

Reheat

Reheat gently on the stovetop, adding a splash of water to loosen the glaze.

Avo's Tip

Zest the lime before juicing it — the zest carries most of the bright flavor.
