1 lb elbow macaroni

Sauce

4 tablespoons unsalted butter
¼ cup all-purpose flour
3 cups whole milk
3 cups shredded sharp cheddar
1 cup shredded Monterey Jack

Seasoning

1 tablespoon Cajun seasoning
½ teaspoon smoked paprika

Topping

½ cup panko breadcrumbs
½ cup shredded cheddar
2 tablespoons sliced green onions

How to Make It

Heat the oven to 375°F and butter a baking dish.

Cook the macaroni until just shy of al dente, then drain.

Melt butter in a pot over medium, whisk in flour, and cook 1 minute.

Slowly whisk in the milk, then add Cajun seasoning and smoked paprika. Simmer until thickened.

Off the heat, stir in the cheddar and Monterey Jack until smooth.

Fold the macaroni into the sauce, then transfer to the baking dish.

Scatter the panko and cheddar over the top.

Bake 18 to 20 minutes until bubbly and golden, then top with green onions.

Store up to 3 days.

Reheat in a 350°F oven with a splash of milk to loosen the sauce.
