1 lb elbow macaroni

Sauce

4 tablespoons unsalted butter
¼ cup all-purpose flour
3 cups whole milk
3 cups shredded sharp cheddar
1 cup shredded Monterey Jack
⅓ cup barbecue sauce

Protein

2 cups shredded BBQ pulled pork, homemade or leftover

Topping

½ cup panko breadcrumbs
2 tablespoons sliced green onions

How to Make It

Heat the oven to 375°F and butter a baking dish. Cook the macaroni until just shy of al dente, then drain.

Melt the butter in a pot over medium heat, whisk in the flour, and cook 1 minute. Slowly whisk in the milk and simmer until thickened.

Remove from heat and stir in the cheddar and Monterey Jack until smooth.

Toss the pulled pork with the barbecue sauce, then fold the macaroni and half the pulled pork into the cheese sauce.

Transfer to the baking dish, top with the remaining pulled pork and panko, and bake 20 to 25 minutes until bubbly and golden.

Top with green onions and serve warm.

Store

Store up to 3 days.

Reheat

Reheat in a 350°F oven with a splash of milk to loosen the sauce.
