¼ cup chopped giardiniera

Sauce

2 tablespoons olive oil
1 tablespoon red wine vinegar

Seasoning

½ teaspoon Cajun seasoning

1 round Italian loaf

¼ lb sliced ham
¼ lb sliced salami
¼ lb sliced mortadella

Topping

¼ lb sliced provolone

How to Make It

Stir together the olives, giardiniera, olive oil, vinegar, and Cajun seasoning.

Halve the loaf horizontally and scoop out a little of the soft interior.

Spoon half the olive salad onto the bottom half.

Stack the ham, salami, mortadella, and provolone.

Spread the remaining olive salad and close the sandwich.

Wrap, press with a weight 1 hour, then slice into wedges.
