METHOD
Why It Works

Cooking the cabbage in the sausage drippings gives it deep, smoky flavor. High heat and a little patience let the edges char and sweeten.

Quick Fixes

Cabbage steaming, not browning: cook it in a hot pan and don't stir too often.

Want more heat: add cayenne or red pepper flakes.

Ingredients

Protein

1 lb andouille or smoked sausage, sliced

Sauce

1 tablespoon olive oil
3 cloves garlic, minced
¼ cup low-sodium chicken broth

Vegetables

1 small head green cabbage, chopped
1 yellow onion, sliced

Seasoning

1 tablespoon Cajun seasoning
½ teaspoon smoked paprika

Topping

2 tablespoons sliced green onions

How to Make It

1

Heat olive oil in a large skillet over medium-high. Brown the sausage, then transfer to a plate.

2

Add the onion to the skillet and cook 3 minutes.

3

Add the cabbage and cook 8 to 10 minutes, stirring occasionally, until tender and lightly charred.

4

Stir in garlic, Cajun seasoning, and smoked paprika and cook 1 minute.

5

Return the sausage, add the broth, and cook 2 minutes until heated through.

6

Top with green onions and serve.

Store
