2 cloves garlic

3/4 cup cream

 Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup pasta water before draining.

While the pasta cooks, heat a drizzle of olive oil in a large skillet over medium heat. Add the garlic and cook 30–60 seconds until fragrant.

Pour in the cream and bring to a gentle simmer. Cook 3–4 minutes, stirring occasionally, until slightly thickened.

Add the fresh spinach in batches, stirring until each handful wilts before adding the next.

Add the drained pasta and toss to coat. Add a splash of reserved pasta water if the sauce is too thick. Stir in Parmesan, taste and adjust seasoning, and serve immediately.

Quick Fixes

  • Sauce too thick: Add pasta water a splash at a time while tossing over low heat.

  • Spinach turning yellow: Add it off heat or at the very last moment — just enough to wilt. Overcooking kills the color.
