1 teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil

Sauce

3 cloves garlic, minced
½ cup chicken broth
¾ cup heavy cream
⅓ cup grated Parmesan cheese
½ cup chopped sun-dried tomatoes, drained if oil-packed
3 cups baby spinach
1 teaspoon fresh thyme leaves, plus more for garnish if desired

How to Make It

Pat the chicken thighs dry with paper towels.

Season the chicken on both sides with the salt, black pepper, and Italian seasoning.

Heat the olive oil in a large skillet over medium heat.

Place the chicken skin-side down in the skillet and cook for 6 to 8 minutes until the skin is deep golden and releases easily.

Flip the chicken and cook for 3 minutes on the second side.

Transfer the chicken to a plate.

Add the garlic to the skillet and cook for 30 seconds until fragrant.

Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet.

Simmer uncovered over medium-low heat for 8 to 10 minutes until the chicken reaches at least 165°F in the thickest part.
