 Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment and lightly grease it.

In a small bowl, whisk together the honey, soy sauce, minced garlic, and any other glaze ingredients until combined.

Pat the chicken thighs dry with paper towels and season both sides with salt and pepper. Place skin-side up on the prepared baking sheet. Spoon or brush the glaze generously over each thigh, coating the tops and sides.

Bake for 25–30 minutes, basting with the pan juices halfway through, until the glaze is caramelized and the chicken is cooked through. Internal temperature should reach 165°F (74°C). If you want deeper caramelization, broil on high for the final 2–3 minutes watching closely

Remove from oven and rest for 5 minutes before serving. Spoon any remaining pan glaze over the top and garnish with sesame seeds or fresh thyme if desired.

Quick Fixes

  • Glaze not caramelizing: Broil the last 2–3 minutes for a sticky, lacquered finish. Watch closely so it doesn't burn.

  • Chicken undercooked in center: Use bone-in thighs and check with a thermometer — 165°F internal temp. Boneless cook faster.
