¼ cup beef broth or water (to keep the meat "glossy" and moist).

Seasoning

Spice blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp garlic powder, ½ tsp onion powder, ½ tsp smoked paprika, a pinch of cayenne.

Pasta & Grains

12 small corn or flour tortillas (street taco size).

Topping

Shaved radishes, for serving
crumbled cotija cheese, for serving
fresh cilantro, for serving
diced white onion, for serving
lime wedges, for serving

How to Make It

Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain any excess fat.

Season & Simmer: Lower the heat to medium. Add the spice blend and the beef broth. Stir well and simmer for 3–5 minutes until the liquid has reduced to a thick, glossy glaze that coats the meat.

Char the Tortillas: For that professional look, char your tortillas directly over a gas flame for 10 seconds per side or in a dry pan until they have light toasted spots.

Assemble: Spoon the beef into the center of the warm tortillas. Top with onions, radishes, a sprinkle of cotija, and a heavy hand of fresh cilantro.v

Store

Store beef in an airtight container for up to 3 days. Store toppings separately.

Reheat

Warm beef in a skillet with a splash of water to restore that "glossy" look.
