1 lb lean ground beef (90/10 is best for flavor without too much grease).

¼ cup beef broth or water (to keep the meat "glossy" and moist).

1 tbsp chili powder, 1 tsp cumin, 1 tsp garlic powder, ½ tsp onion powder, ½ tsp smoked paprika, and a pinch of cayenne.

12 small corn or flour tortillas (street taco size).

Shaved radishes, crumbled cotija cheese, fresh cilantro, diced white onion, and lime wedges.

Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain any excess fat.

Season & Simmer: Lower the heat to medium. Add the spice blend and the beef broth. Stir well and simmer for 3–5 minutes until the liquid has reduced to a thick, glossy glaze that coats the meat.

Char the Tortillas: For that professional look, char your tortillas directly over a gas flame for 10 seconds per side or in a dry pan until they have light toasted spots.
