12 oz andouille sausage, sliced
1 lb dried red beans, soaked overnight

Vegetables

1 yellow onion, diced
1 green bell pepper, diced
2 celery stalks, diced

Sauce

4 cloves garlic, minced
6 cups low-sodium chicken broth

Seasoning

1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon dried thyme

Pasta & Grains

cooked white rice, for serving

Topping

2 tablespoons sliced green onions

How to Make It

Brown the andouille in a skillet, then add it to the slow cooker.

Add red beans, onion, bell pepper, celery, garlic, Cajun seasoning, smoked paprika, thyme, and broth to the slow cooker.

Cover and cook on low 7 to 8 hours until the beans are creamy.

Mash some of the beans against the side to thicken.

Spoon over rice and top with green onions.

Store up to 4 days or freeze up to 2 months.

Reheat on the stovetop, loosening with broth.
