How to Make It

Pat the pork dry and toss with the Cajun seasoning. Heat 1 tablespoon olive oil in a large skillet over medium-high heat, add the pork, and cook 4 to 5 minutes until browned; transfer to a plate.

Add the remaining oil to the skillet, then add the onion, bell pepper, and celery and cook 5 minutes until softened; stir in the garlic and cook 30 seconds.

Stir in the rice to coat, add the broth and smoked paprika, bring to a simmer, cover, and cook on low 18 minutes until the rice is tender.

Stir the pork back into the skillet and cook 2 minutes until heated through and the pork reaches 145°F.

Top with green onions and serve warm.
