Sauce

2 tablespoons olive oil
3 cloves garlic, minced
7 cups low-sodium chicken broth

Vegetables

1 yellow onion, diced
2 celery stalks, diced
1 green bell pepper, diced

¾ cup long-grain white rice

Topping

2 tablespoons sliced green onions

How to Make It

Season chicken with Cajun seasoning.

Heat olive oil in a large pot over medium-high. Brown chicken 3 minutes per side, then transfer to a plate.

Add onion, celery, and bell pepper. Cook 5 minutes, then add garlic and cook 30 seconds.

Pour in broth, smoked paprika, and thyme. Return chicken and simmer 12 minutes.

Remove the chicken, shred it, and return it to the pot.
