Toss the shrimp with the Cajun seasoning.

Heat 1 tablespoon olive oil in a large skillet over high and cook shrimp 1 to 2 minutes per side until pink, then transfer to a plate.

Push the pan aside, add the beaten eggs, and scramble, then set aside with the shrimp.

Add the remaining oil, then onion, bell pepper, and celery. Cook 4 minutes, then stir in garlic.

Add the rice, soy sauce, and smoked paprika and toss over high heat 3 to 4 minutes.

Return the shrimp and eggs and toss to combine.
