METHOD
Why It Works

Cheese tortellini cooks in minutes right in the broth, soaking up the seasoning. A little cream and tomato give the soup a velvety, restaurant-style base.

Quick Fixes

Broth too thick: add more broth before serving.

Tortellini overcooked: add it in the last 5 minutes only.

Ingredients

Protein

12 oz andouille or smoked sausage, sliced

Sauce

1 tablespoon olive oil
3 cloves garlic, minced
1 can diced tomatoes, 14.5 oz
5 cups low-sodium chicken broth
1 cup heavy cream

Vegetables

1 yellow onion, diced
3 cups baby spinach

Seasoning

1 tablespoon Cajun seasoning

Pasta & Grains

9 oz cheese tortellini

Topping

¼ cup grated Parmesan

How to Make It

1

Heat olive oil in a large pot over medium-high. Brown the sausage, then stir in onion and cook 4 minutes.

2

Add garlic and Cajun seasoning and cook 30 seconds.

3

Pour in tomatoes and broth. Bring to a simmer and cook 5 minutes.

4

Stir in cream.

5

Add tortellini and simmer 5 minutes until tender.

6

Stir in spinach until wilted.

7

Top with Parmesan and serve.

Store

Store up to 3 days; the tortellini softens further as it sits.

Reheat

Reheat gently on the stovetop with a splash of broth.

Add the tortellini in the last five minutes so it stays tender, not mushy.

COMMON QUESTIONS

Frequently Asked Questions

Everything you need to know before you start cooking.

• Fresh or frozen tortellini?
Both work; frozen just needs a minute or two longer in the broth.
• Can I use chicken instead of sausage?
Yes. Browned diced chicken works well with the same seasoning.
• How do I make it lighter?
Use half-and-half instead of cream and lean on the tomato for body.
