Sauce

1 cup buttermilk
2 large eggs
⅓ cup unsalted butter, melted

Vegetables

1 cup corn kernels
1 jalapeño, seeded and minced

Topping

½ cup shredded cheddar

How to Make It

Heat the oven to 400°F and butter an 8-inch baking pan.

Whisk cornmeal, flour, sugar, baking powder, Cajun seasoning, and salt in a large bowl.

In another bowl, whisk buttermilk, eggs, and melted butter.

Stir the wet into the dry until just combined, then fold in corn, jalapeño, and cheddar.

Pour into the pan and bake 22 to 25 minutes, until golden and a tester comes out clean.

Cool 10 minutes, then slice and serve.

Store covered at room temperature up to 3 days.

Reheat

Warm slices in a 300°F oven or microwave briefly.
