METHOD
Why It Works

Smothering the corn low and slow draws out its sweetness and builds deep flavor. A splash of cream pulls everything into a silky side.

Quick Fixes

Too thick: loosen with a splash of broth.

Want more smoke: add a pinch of smoked paprika.

Ingredients

Sauce

2 tablespoons unsalted butter
2 cloves garlic, minced
⅓ cup heavy cream

Vegetables

1 small yellow onion, diced
1 green bell pepper, diced
2 celery stalks, diced
4 cups corn kernels
1 tomato, diced

Seasoning

1 teaspoon Cajun seasoning
½ teaspoon smoked paprika

Topping

2 tablespoons sliced green onions

How to Make It

1

Melt butter in a skillet over medium. Add onion, bell pepper, and celery and cook 5 minutes.

2
