METHOD
Why It Works

Tossing the warm potatoes with a little vinegar lets them soak up flavor before the dressing goes on. Folding gently keeps the potatoes intact and creamy.

Quick Fixes

Salad dry: add a spoonful more mayo or mustard.

Bland: season the warm potatoes, not just the dressing.

Ingredients

Vegetables

2 lb Yukon Gold potatoes, peeled and cubed
2 celery stalks, diced
¼ cup diced red onion

Protein

3 hard-boiled eggs, chopped

Sauce

½ cup mayonnaise
2 tablespoons yellow mustard
1 tablespoon dill pickle relish
1 tablespoon apple cider vinegar

Seasoning

1 teaspoon Cajun seasoning
½ teaspoon smoked paprika

Topping

2 tablespoons sliced green onions

How to Make It

1

Cover the potatoes with salted water and boil 12 to 15 minutes until fork-tender, then drain.

2

Toss the warm potatoes with the vinegar and let cool slightly.

3

Whisk mayonnaise, mustard, relish, Cajun seasoning, and smoked paprika in a small bowl.

4

Add eggs, celery, and red onion to the potatoes, then fold in the dressing.

5

Cover and chill at least 1 hour.

6

Top with green onions and serve.
