12 oz smoked sausage or andouille, sliced

Vegetables

1 1/2 lb baby potatoes, diced into 1/2-inch pieces
1 bell pepper, diced
1/2 yellow onion, diced
2 cloves garlic, minced

Seasoning

1 tablespoon olive oil
1 tablespoon butter
2 teaspoons Cajun seasoning
1/2 teaspoon smoked paprika

Topping

Chopped parsley or scallions, for serving
Lemon wedges, for serving (optional)
Sour cream, for serving (optional)

How to Make It

Microwave diced potatoes with a splash of water for 5 to 6 minutes, until barely tender. Drain and pat dry.

Heat olive oil and butter in a large skillet over medium-high heat. Add potatoes and cook for 8 to 10 minutes, turning occasionally, until golden.

Add sliced sausage and cook for 4 to 5 minutes, until browned at the edges.

Add bell pepper and onion. Cook for 4 minutes, until softened, then stir in garlic, Cajun seasoning, and smoked paprika.

Cook 1 to 2 minutes more, until everything is hot and coated in seasoning. Taste and adjust with salt if needed.

Finish with parsley or scallions and serve with lemon wedges or a spoonful of sour cream.
