2 teaspoons Cajun seasoning

1/2 teaspoon smoked paprika

Chopped parsley or scallions, for serving

 Instructions

Microwave diced potatoes with a splash of water for 5 to 6 minutes, until barely tender. Drain and pat dry.

Heat olive oil and butter in a large skillet over medium-high heat. Add potatoes and cook for 8 to 10 minutes, turning occasionally, until golden.

Add sliced sausage and cook for 4 to 5 minutes, until browned at the edges.

Add bell pepper and onion. Cook for 4 minutes, until softened, then stir in garlic, Cajun seasoning, and smoked paprika.
