METHOD
Why It Works

Searing the sausage and peppers together builds smoky flavor for the filling. A swipe of remoulade and a toasted roll pull it into a classic po' boy.

Quick Fixes

Roll soggy: toast it and add the remoulade as a barrier.

Want more heat: add hot sauce or extra Cajun seasoning.

Ingredients

Protein

1 lb andouille or smoked sausage, sliced lengthwise

Sauce

1 tablespoon olive oil
½ cup remoulade

Vegetables

1 green bell pepper, sliced
1 small onion, sliced

Seasoning

1 small onion, sliced

Pasta & Grains

4 hoagie rolls

Topping

1 cup shredded lettuce
1 tomato, sliced

How to Make It

1

Heat olive oil in a skillet over medium-high and sear the sausage until browned.

2

Add the bell pepper and onion and cook 5 minutes, then stir in the Cajun seasoning.

3

Toast the hoagie rolls.

4

Spread remoulade on both cut sides of each roll.

5

Pile in the sausage and peppers, then add lettuce and tomato.

6

Close the rolls and serve.

Store

Store the filling up to 3 days; assemble fresh.

Reheat

Reheat the filling on the stovetop and toast fresh rolls.
