1 slice artisan bread (such as sourdough), toasted

 Instructions

Toast the bread until golden and crisp on the outside while still tender in the center.

Mash the avocado in a small bowl with a pinch of flaky salt and black pepper.

Bring a small pot of water to a gentle simmer and poach the egg until the white is set and the yolk remains soft, about 3 minutes.

Spread the mashed avocado evenly over the toast.

Top with sliced cherry tomatoes and microgreens.

Place the poached egg on top and finish with red pepper flakes, a drizzle of olive oil, and additional salt and pepper to taste.
