1 lb ground pork
2 large eggs, beaten

2 tablespoons olive oil
3 cloves garlic, minced
3 tablespoons soy sauce
1 teaspoon sesame oil

Vegetables

1 cup frozen peas and carrots

Pasta & Grains

4 cups cold cooked rice

Topping

2 tablespoons sliced green onions

How to Make It

Heat 1 tablespoon olive oil in a large skillet over high heat, cook the ground pork until browned, and push it to one side.

Add the peas, carrots, and garlic and cook for 2 minutes.

Push everything aside, add the beaten eggs, and scramble.

Add the remaining oil and the rice and toss over high heat for 3 to 4 minutes.

Add the soy sauce and sesame oil and toss to combine. Top with green onions and serve warm.

Store up to 3 days.

Reheat in a hot skillet to re-crisp the rice.
