1 can diced tomatoes, 14.5 oz

Vegetables

1 small onion, diced
1 bell pepper, diced

1 cup long-grain white rice

Seasoning

1 teaspoon paprika
1 teaspoon Italian seasoning

Topping

2 tablespoons chopped fresh parsley

How to Make It

Heat the olive oil in a deep skillet over medium-high heat, cook the ground pork until browned, breaking it up as it cooks.

Add the onion and bell pepper and cook for 4 minutes, then stir in the garlic.

Stir in the rice and coat it in the skillet mixture.

Add the broth, diced tomatoes, paprika, and Italian seasoning, bring to a simmer, cover, and cook on low for 18 minutes.

Rest the covered skillet for 5 minutes, then fluff the rice, top with parsley, and serve warm.
