METHOD
Why It Works

Browning the pork builds a savory base for the broth. Cooking the noodles right in the pot makes it a fast, one-bowl dinner.

Quick Fixes

Broth flat: add a splash more soy or miso for depth.

Noodles mushy: add them in the last few minutes only.

Ingredients

Protein

1 lb ground pork
4 soft-boiled eggs, halved

Sauce

1 tablespoon sesame oil
3 cloves garlic, minced
1 tablespoon grated ginger
6 cups low-sodium chicken broth
3 tablespoons soy sauce

Pasta & Grains

10 oz ramen noodles

Vegetables

2 cups baby spinach

Topping

2 tablespoons sliced green onions

How to Make It

1

Heat the sesame oil in a pot over medium-high heat, cook the ground pork until browned, breaking it up as it cooks. Stir in the garlic and ginger and cook for 30 seconds.

2

Pour in the broth and soy sauce and bring to a simmer.

3

Add the ramen noodles and cook until tender, then stir in the spinach and cook until wilted.

4

Ladle into bowls and top with soft-boiled eggs and green onions.

Store

Store the broth and noodles separately up to 3 days.

Reheat

Reheat the broth and add fresh noodles to keep them from getting soft.

Avo's Tip

Cook the noodles separately if you're saving leftovers so they don't soak up all the broth.
