METHOD
Why It Works

Browning the sausage first leaves smoky flavor for the peppers to soak up. Cooking the peppers until just tender keeps them sweet and a little crisp.

Quick Fixes

Peppers too soft: cook them just until crisp-tender.

Want more heat: add cayenne or hot sauce.

Ingredients

Protein

1 lb andouille or smoked sausage, sliced

Sauce

1 tablespoon olive oil
3 cloves garlic, minced
¼ cup low-sodium chicken broth

Vegetables

1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced

Seasoning

1 teaspoon Cajun seasoning
½ teaspoon smoked paprika

Topping

2 tablespoons chopped fresh parsley

How to Make It

1

Heat olive oil in a skillet over medium-high. Brown the sausage, then transfer to a plate.

2

Add the bell peppers and onion to the skillet and cook 5 minutes.

3

Stir in garlic, Cajun seasoning, and smoked paprika and cook 30 seconds.

4

Pour in the broth and scrape up the browned bits.

5

Return the sausage and cook 2 to 3 minutes until heated through.

6

Top with parsley and serve.

Store

Store up to 3 days.

Avo's Tip

Brown the sausage undisturbed for a minute so it picks up color before the peppers go in.
