METHOD
Why It Works

Grilling caramelizes the sausage and peppers for smoky, charred flavor. A Cajun butter brush adds a glossy, seasoned finish right off the heat.

Quick Fixes

Veg cooking unevenly: cut everything the same size.

Sticking to the grate: oil the grill and skewers first.

Ingredients

Protein

1 lb andouille or smoked sausage, cut into 1-inch pieces

Vegetables

1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks

Sauce

3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Seasoning

1 tablespoon Cajun seasoning

Topping

lemon wedges, for serving

How to Make It

1

Heat the grill to medium-high and oil the grate.

2

Stir the Cajun seasoning into the melted butter.

3

Thread the sausage, bell peppers, and onion onto skewers and brush with the olive oil.

4

Grill 10 to 12 minutes, turning, until charred and the sausage is heated through.

5

6

Serve with lemon wedges.
