1½ lb boneless skinless chicken breasts, halved into thin cutlets

Seasoning

1 tablespoon Cajun seasoning
½ teaspoon smoked paprika
½ teaspoon kosher salt
¼ teaspoon black pepper
½ teaspoon Cajun seasoning, for the sauce

Sauce

2 tablespoons olive oil
3 tablespoons unsalted butter
6 cloves garlic, minced
½ cup low-sodium chicken broth
1 cup heavy cream
½ cup grated Parmesan

Topping

2 tablespoons chopped fresh parsley

How to Make It

Pat chicken dry and season both sides with Cajun seasoning, smoked paprika, salt, and pepper.

Heat olive oil in a large skillet over medium-high. Sear cutlets 4 to 5 minutes per side until golden and cooked through, then transfer to a plate.

Lower heat to medium and melt butter in the same skillet. Add garlic and cook 30 seconds until fragrant.

Pour in broth and scrape up the browned bits. Stir in cream and the 1/2 teaspoon Cajun seasoning and simmer 3 to 4 minutes.

Whisk in Parmesan until smooth. Return chicken and any juices to the skillet and spoon sauce over.
