½ cup brown sugar
1 cup mini marshmallows (optional)

How to Make It

Cook the Sweet Potatoes: Boil cubed sweet potatoes in salted water for 12–15 minutes, until very tender. Drain well.

Mash the Base : In a large bowl, mash sweet potatoes with butter, brown sugar, milk, vanilla, cinnamon, nutmeg, and salt. Stir in the beaten egg.

Prepare the Casserole : Spread the sweet potato mixture evenly into a greased 9×13 baking dish.

Add the Topping : Sprinkle mini marshmallows over the top. Mix pecans with brown sugar and melted butter, then scatter evenly between marshmallows.
