Too thin: Simmer uncovered on medium-low for an extra 10 minutes. Mashing a few beans against the side also thickens it naturally.

Protein

1.5 lbs ground turkey
30 oz canned beans (two 15 oz cans, kidney or black)

Vegetables

14.5 oz diced tomatoes (one can)

Seasoning

1 medium onion, diced
2 tbsp chili powder
3 cloves garlic, minced
1 tsp cumin
1 tbsp olive oil

Sauce

1 cup chicken broth

How to Make It

Dice onion and mince garlic. Drain and rinse canned beans.

Heat a drizzle of oil in a large pot over medium heat. Add the diced onion and cook 3–4 minutes until softened. Add garlic cook 1 minute.

Add the ground turkey and cook 5–6 minutes, breaking it apart, until browned and cooked through.

Stir in the chili powder and any other spices. Cook 1 minute to toast the spices.

Add diced tomatoes, beans, and broth. Stir to combine and bring to a simmer.

Bring to a simmer, reduce heat to medium-low, and cook uncovered for 20 minutes, stirring occasionally, until the chili thickens.

Taste and adjust seasoning.

Store

Store in airtight container up to 4 days. Freeze up to 2 months.

Reheat

Warm gently in microwave.
