Heat a drizzle of oil in a large pot over medium heat. Add the diced onion and cook 3–4 minutes until softened. Add the ground turkey and cook 5–6 minutes, breaking it apart, until browned and cooked through.

Stir in the chili powder and any other spices. Cook 1 minute to toast the spices. Add the diced tomatoes and stir to combine.

Drain and rinse the canned beans and stir them into the pot.

Bring to a simmer, reduce heat to medium-low, and cook uncovered for 20 minutes, stirring occasionally, until the chili thickens.

Taste and adjust seasoning. Serve with shredded cheese, sour cream, green onions, or cornbread.

Quick Fixes

  • Too thin: Simmer uncovered on medium-low for an extra 10 minutes. Mashing a few beans against the side also thickens it naturally.

  • Bland flavor: Add a pinch of smoked paprika and taste for salt. A small squeeze of lime brightens everything at the end.
