Ingredients

2 lbs. Top sirloin steak, cut in cubes

4 garlic cloves, minced or chopped

3 tbsp unsalted butter

4

salt and pepper to taste

2 tbsp olive oil

6

1 tbsp Worcestershire sauce (optional for flavor)

7

¼ tsp rosemary or thyme (optional for flavor)

 Instructions

Pat steak cubes dry and season with salt and pepper

2

Heat olive oil in large skillet over high heat with 2 tbsp of olive oil

3

Sear steak in single layer for 2-3 mins, undisturbed for crust, flip cook other side 1-2 mins until browned

4

Remove steak from skillet, set aside.

Lower heat to med-low. Add the butter, garlic, and optional thyme and Worcestershire sauce.

Stir mixture for 30 seconds and return steak to pan, toss, cook for 1 minute.

Serve immediately

Quick Fixes

  • Steak steaming instead of searing: Work in batches — don't crowd the pan. High, dry heat is what creates the crust.

  • Overcooked: Small bites cook in 2–3 minutes total. Pull them the moment they're browned on the outside.

  • Garlic burning: Add butter and garlic after removing steak from heat, then toss the bites back in off the flame.
